Italian Chicken Cutlets Recipe

Italian Chicken Cutlets: The Crispy, Golden Recipe You’ll Make Again and Again

Italian chicken cutlets are a great example of how you don't need a lot of ingredients to make a delicious dinner. They're basically thin pieces of chicken breast that are seasoned, covered in flour, egg, and breadcrumbs, and then cooked until they're crispy on the outside and tender on the inside. This dish is similar to the Italian tradition of Milanese-style cooking, where a thin piece of meat is breaded and fried in a pan. Chicken Milanese is often served with a squeeze of fresh lemon, some Parmesan cheese, and a side of greens, which makes it feel both comforting and fresh at the same time. One of the best things about Italian chicken cutlets is that you can serve them in a lot of different ways - you can put them with pasta, in a sandwich, on top of a salad, or just eat them on their own with a squeeze of lemon. They're kind of like a fancy version of crispy chicken tenders, but they're actually really easy to make. Once you learn how to make them, you can customize the recipe to your taste by changing up the herbs, cheese, breadcrumbs, and sauce. That's why this recipe is perfect for a weeknight dinner - it's easy, versatile, and always a crowd-pleaser. You can make it your own and serve it in a way that feels special, even on a busy night.

Servings: 4
Prep time: About 20–30 minutes
Cook time: About 15–20 minutes, depending on thickness and batch size
Total time: About 40–50 minutes

Ingredients

  • 1½ pounds boneless, skinless chicken breasts
  • 1 cup Italian-style or plain breadcrumbs
  • ½ cup freshly grated Parmesan
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1–2 garlic cloves, finely minced
  • Zest of 1 lemon
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil or suitable cooking oil, for frying
  • Lemon wedges, for serving
  • Fresh parsley, optional

Instructions

  1. Slice the chicken breasts horizontally into thin pieces.
  2. Place the chicken between sheets of plastic wrap or parchment and gently pound until evenly thin.
  3. Season both sides with salt and black pepper.
  4. Set up three shallow dishes: flour; beaten eggs; and breadcrumbs mixed with Parmesan, oregano, parsley, garlic, lemon zest, and a little salt and pepper.
  5. Coat each chicken piece lightly in flour and shake off the excess.
  6. Dip it into the beaten egg.
  7. Transfer it to the breadcrumb mixture and press gently so the coating adheres.
  8. Heat a large skillet with enough oil to coat the bottom generously.
  9. Fry the cutlets in batches until golden and crisp, turning once.
  10. Check the thickest portion with a food thermometer and cook until the chicken reaches 165°F (73.9°C).
  11. Transfer the cooked cutlets to a rack or paper towel-lined plate.
  12. Finish with fresh lemon juice and parsley.
  13. Serve immediately with salad, pasta, vegetables, or roasted potatoes.

The finished chicken should have a crisp, golden Parmesan breadcrumb crust surrounding tender chicken. The lemon should provide just enough acidity to brighten the dish without overpowering the savory coating. If the first batch is slightly darker or lighter than you prefer, adjust the heat before cooking the remaining pieces. Remember that chicken thickness, skillet size, oil temperature, and individual appliances can all affect cooking time, so temperature is more reliable than the clock.
